Favourite Recipe Friday
At last, it is Friday.
I thought I would share one of my new favourite recipes with you just in case you plan on making food this weekend (a highly likely occurrence if you ask me).
The recipe is easy (would I have it any other way?) and of course, can be made in the Crock-Pot (what a dream).
Salsa Chicken requires the following:
9 chicken thighs
1 cup salsa
1 cup frozen corn
1 can of black beans, drained and rinsed
1/2 container of cream cheese (I am referring to the round container)
Cook on simmer or low for 8-9 hours and you have a tasty, cost-efficient, and relatively nutritious meal. We’ve been eating it with Basmati rice, but you could use any side you deem appropriate.
I hope you enjoy this recipe as much as we do. It provides enough food for five lunches or 2-3 dinners shared between two people. The simplicity of the recipe was what initially attracted me to it, but the taste keeps me coming back.
